Chewy Chocolate Caramel Candy is a traditional American recipe for a classic Halloween treat of Halloween candy bars made from a mix of molasses (treacle), butter, cream, chocolate and sugar boiled until thick and set in a pan. The full recipe is presented here and I hope you enjoy this classic American version of: Chewy Chocolate Caramel Candy.
Gently melt the butter in a saucepan then stir in the cream, sugar and treacle (or molasses). Bring the mixture just to a boil then add the chocolate (it's best if you balance the chocolate on a wooden spoon so that it can melt into the liquid, rather than risk its burning on the hot base of the saucepan.
Once the chocolate has melted, stir into the liquid and continue boiling, stirring occasionally, until the mixture reaches the hard ball 118–121°C stage (when a little of the syrup dropped into cold water forms a hard ball).
Take off the heat and beat in the vanilla then turn the mixture into a large buttered pan so you have a depth of about 2cm. Allow to cool and when nearly cold turn the mixture out of the tin and cut into cubes using scissors or a very sharp knife. Wrap each piece in greaseproof paper and set aside in a cool place to harden completely.
