Cheshire Potted Cheese

This is an excellent way of using-up any odd or old pieces of cheese you may have.

Ingredients:

225g Cheshire cheese, grated
50g butter, softened
1/4 tsp ground allspice
2 tbsp sweet sherry or Madeira
melted butter for sealing

Method:

Add the cheese, butter and allspice to a pan. Heat gently until molten then mix-in the wine and stir to combine. Pour into ramekins then press down to remove the air before smoothing the tops. Cover each ramekin with a generous layer of melted butter then place in the refrigerator to set.

Remove from the refrigerator about 1 hour before serving and use to either serve spread on toast or serve with fruit.

The potted cheese will keep in the refrigerator for several weeks as long as the butter seal isn't broken.

This is a great way of using-up or storing any cheese you might have left after the festive season.
