Cheshire Potted Cheese is a traditional English recipe (from Cheshire) for a classic way of using-up old cheese by cooking with butter, allspice and wine, pouring into pots and sealing with melted butter. Add the cheese, butter and allspice to a pan. Heat gently until molten then mix-in the wine and stir to combine. Pour into ramekins then press down to remove the air before smoothing the tops. Cover each ramekin with a generous layer of melted butter then place in the refrigerator to set.
Remove from the refrigerator about 1 hour before serving and use to either serve spread on toast or serve with fruit.
The potted cheese will keep in the refrigerator for several weeks as long as the butter seal isn't broken.
This is a great way of using-up or storing any cheese you might have left after the festive season.
