Cheddar Cheese Pudding is a traditional British recipe for classic savoury pudding of a pie dish lined with bread spread with butter and mustard filled with onion and bacon that's topped with an egg custard and topped with cheddar cheese before being oven baked. The full recipe is presented here and I hope you enjoy this classic British version of: Cheddar Cheese Pudding.
Add the bacon to a medium frying pan over medium heat and cook until it has rendered of it's fat and begun to brown. Now add the onion, stir to combine and fry until soft and translucent, but not coloured (about 5 minutes). Take the mixture off the heat at this point and set aside.
Meanwhile, cream together the butter and mustard in a small bowl. Use this mixture to spread on both sides of the bread. Use four slices of the bread to line the bottom and sides of a deep pie plate then spoon half the onion mixture into the dish and spread evenly. Top with tree more slices of bread, add the remaining onion mixture then top with the remaining bread.
Whisk together the eggs, milk, Worcestershire sauce, nutmeg and sherry in a bowl and pour over the pudding. Sprinkle the Cheddar cheese over the top and place in the centre of an oven pre-heated to 170°C (325°F/Gas Mark 3) and bake for about 20 minutes, or until the cheese is bubbly and has just started to brown.
Allow to cool a little before serving with a green salad.
