Ingredients:
2 tbsp honey
100ml hoisin sauce
1 tbsp dark soy sauce
1 tbsp crushed yellow bean curd (huang jiang, available from Chinese supermarkets)
2 tbsp rice wine
1 tsp sesame oil
700g (about) pork fillet
Method:
Combine the honey, hoisin sauce, soy sauce, yellow bean curd, rice wine and sesame oil in a ziploc bag. Add the pork fillet and keep rolling over in the marinade until the meat is completely coated. Set aside to marinate for at least 4 hours (best if left over night in the refrigerator), turning the bag occasionally.
Add a shallow layer of water to the base of a roasting tin. Sit a roasting rack on top then place the meat on top of this (reserve any left-over marinade). Transfer to an oven pre-heated to 220°C and roast for 15 minutes. At this point, reduce the oven temperature to 180°C and cook for 15 minutes more, brushing the meat with a little of the left-over marinade as you cook.
Remove from the oven, slice the meat into thick pieces and serve accompanied by rice. Char siu pork can also be sliced into soup or served with noodles.
