Char-grilled Turkey with Cheesy Pockets a Classic British recipe for a dish of turkey breast pieces stuffed with cheese, wrapped in bacon and cooked on a barbecue and served with garlic bread.

Ingredients:

4 turkey breast pieces (about 225g each)
4 portions of cheese (Mozzarella, Camembert or Brie are good) — about 15g each
4 sage leaves
8 rashers of rindless streaky bacon
4 tbsp olive oil
2 tbsp lemon juice
salt and freshly-ground black pepper, to taste

To Serve:
garlic bread
salad leaves
cherry tomatoes


Method:

Take the turkey breast pieces and, using a sharp knife, carefully cut a pocket into the side of each. Use your fingers to open the breast out a little. Season the inside with salt and black pepper then place a portion of cheese into each pocket. Now tuck a sage leaf into each pocket.

Stretch the bacon rashers with the back of a knife. Wrap two pieces of bacon around each turkey breast (ensure that the pocket opening is completely covered). Use a cocktail stick to keep the bacon in place.

Mix together the oil and lemon juice in a small bowl. Place on a barbecue over medium-hot coals and cook for about 10 minutes per side, basting frequently with the oil and lemon mixture.

When the turkey is almost cooked place the garlic bread on your barbecue and toast lightly. Once cooked, transfer the turkey to warmed serving plates. Serve immediately, accompanied by garlic bread, salad leaves and cherry tomatoes.
