This is an African fusion recipe where I combine the wild food, catkin crumbs (catkin pollen capsules soaked in syrup and dried) by frying with suya spice and then adhering to chicken wings coated in a blend of peanut oil and peanut butter.
Mix the peanut oil with the peanut butter then use to brush the chicken wings.
Blend the suya spice with the catkin crumbs sprinkle the spice blend over the oiled chicken wings, patting to allow the spices to adhere.
Arrange the chicken wings on a lined baking tray then transfer to an oven pre-heated to 170C and bake for about 40 minutes, until the chicken wings are cooked through and the coating is crunchy.
You can also fry the crumbed mixture, as the image of the pork cutlet shows.
Of all the ways of using catkin crumbs, this is one of the ones that I enjoyed most.
The modern way of serving suya-spiced meat is with a salad of grated carrots, finely sliced red onion and chopped cucumber.
In this case, I lightly fried a blend of grated carrot and shredded wild black mustard greens to serve as an accompaniment.
