Carob Apple Cake: A British recipe for a classic vegetarian cake made with a flour, egg, sugar and margarine containing sliced apples that's topped with a blend of melted carob chips and butter.
For the Topping:
75g carob chips
knob of butter
water
Method:
Cream together the margarine and sugar until light and fluffy. Add half the beaten egg and beat well to combine, then add the remaining egg and beat once more.
Sift the flour, carob powder and baking powder over the top. Gently fold to combine then add the sherry and finish mixing. Set half the cake batter in a greased and lined 18cm diameter cake tin. Top with the sliced apples then spoon the remaining batter over the top.
Transfer to an oven pre-heated to 160°C (Gas Mark 3) and bake for 75 minutes, or until firm to the touch. Remove from the oven and allow to cool in the tin for 10 minutes then turn out onto a wire rack to cool completely.
For the topping, melt the carob chips with the butter and just a little water in a pan. Add more water, if needed, to give a pouring consistency. Drizzle this mixture over the top of the cake and allow to set before slicing and serving.
This cake can be served with custard or yoghurt as a dessert. It also works well cold and sliced to accompany afternoon tea.
