Caramelized Walnuts: A British recipe for a sweet (candy) made from walnuts coated in a honey and sugar caramel.
Ingredients:
100g walnut halves
1 tbsp honey
1 tbsp water
1 tbsp vegetable oil
50g granulated sugar
1/2 tsp sea salt
Method:
Arrange the walnut halves on a baking tray... transfer to an oven pre-heated to 160°C and bake for about 12 minutes, or until lightly-toasted and golden.
In the meantime, combine the honey, water and oil in a small pan and bring to a boil.
Reduce the heat to medium then stir in the toasted walnuts. Cook, stirring frequently, until the liquid has evaporated and the nuts are nicely toasted (about 1 minute).
Turn the nut mixture into a bowl.
In a second bowl, stir together the sugar and salt. Toss the nuts in this mixture. Spread the nuts out on a sheet of greaseproof (waxed) paper and set aside to cool).
Store in an air-tight container.
If desired, you can add 1/4 tsp hot chilli powder to the sugar along with the salt.
These make a great snack on their own and are excellent served with cheese.
