This is a particular favourite of mine and I often make it fresh so that I can serve it oven-warm with a home-made soup. Basically it's a soda bread that's flavoured with spices.
Ingredients:
225g self-raising flour
100g plain flour
1 tsp baking powder
1/4 tsp salt
1/4 tsp cayenne pepper
2 tsp curry powder (as mild or hot as you like)
2 tsp poppy seeds
30g butter, cut into small dice
150ml whole milk
1 egg, beaten
Method:
Sift the flours, baking powder, salt and cayenne pepper into a bowl and add the curry powder and poppy seeds. Stir to combine then add the butter and rub-in with your fingertips until all the ingredients are thoroughly combined.
Mix the milk and beaten egg together and add to the flour mix. Stir to combine then bring the dough together with your hands. Turn the resultant dough onto a lightly-floured surface and knead lightly for a few minutes.
Shape the dough into a round loaf shape and transfer to a well-greased baking tray. Using a sharp knife cut a deep cross into the top of the dough then transfer to an oven pre-heated to 190°C and bake for about 45 minutes, or until nicely browned and the bottom of the bread sounds hollow when tapped.
Transfer to a wire rack and allow to cool enough so it can be handled. Serve warm cut into slices or generous chunks. This bread makes the ideal accompaniment to soups as well as providing a rather different accompaniment to curries and stews.
