Breakfast Koskosi

In Egypt, couscous is called koskosi and it's more commonly served sweet as breakfasts and desserts rather than as savoury dishes.

Ingredients:

150g instant or quick-cook couscous
150g of boiling water
125ml whole milk
1 tsp vanilla extract
pinch of cinnamon
2 tbsp honey
1 tbsp raisins
1 tbsp dried apricots
2 tbsp slivered almonds
1 tbsp olive oil
1/2 tsp salt

Method:

Set the couscous in a saucepan and pour over the boiling water. Cover with a lid and let it soak for 5 minutes.

After this time, fluff the couscous with a fork then stir in the olive oil and salt.

Heat the milk in a small saucepan, add in the vanilla and cinnamon along with the honey.

Spoon the soaked couscous into serving bowls then pour over the hot milk.

Garnish with the dried fruit and almonds.

Serve.
