Bonnach is a traditional Scottish unleavened bread (that today tends to use baking soda).
Ingredients:
360g plain (all-purpose) flour
60g wholemeal flour
60g natural bran
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tbsp sugar
65g cold butter
1 egg lightly beaten
300ml buttermilk
Method:
Pre-heat your oven to 180C.
Combine the flours, bran, baking powder, soda, salt, and sugar in a large bowl.
Cut in butter using two knives until the mixture resembles a coarse meal.
Stir in the egg and buttermilk and mix well until the ingredients come together as a dough.
Turn out onto a floured surface and knead lightly (don't over-work of it will become tough).
Roll or press into a round loaf then transfer to an ungreased baking tray or oven-proof frying pan.
Transfer to the centre and bake for 35 to 45 minutes or until lightly browned and cooked through.
Serve warm with butter.
