Ingredients:
1 whole oven-ready chicken
juice of 1 lemon
1 tbsp parsley, finely chopped
1 egg
150g breadcrumbs
1 tsp olive oil
1 tsp paprika
1 tsp water
salt and freshly-ground black pepper
oil for deep frying
Method:
Wipe the chicken with kitchen paper then cut into serving pieces. Place in a bowl then season liberally with salt and black pepper then sprinkle over the parsley and lemon juice. Set aside in a bowl to marinate in the refrigerator for 2 hours, turning occasionally.
After this time, beat together the egg, oil and water in a bowl and use this to brush all over the marinated chicken pieces. Coat the joints evenly all over with the breadcrumbs and set aside.
Add the oil to a wok or deep fryer and heat until just smoking (180°C). Now place the breaded chicken pieces in the oil and cook for 15 minutes, turning occasionally, or until cooked through and golden brown.
