Bonbons de Coco (Coconut Candies) is a traditional Mauritian recipe for a classic sweet (candy) made from a blend of coconut, milk and sugar flavoured with vanilla and cooked until the mixture is thick before being arranged on baking trays and allowed to set. Heat the milk in a pan, add the sugar and vanilla pod pieces. Mix until the sugar dissolves then bring the mixture to a boil. Stir in the grated coconut and cook over low heat, stirring constantly, until the liquid has evaporated and the mixture is very dry.
Take off the heat and allow to cool until it can be handled then shape the mixture into balls. Arrange these on a greased baking tray and allow to cool completely and set before storing or serving.
