Boiled Cake

Boiled Cake is a traditional Irish recipe for a classic moist teatime cake where the fruit, tea, sugar and syrup are boiled together before the remaining ingredients and the egg are added and the cake is baked to finish. This is a classic boiled fruit cake which is very moist in texture and also stores well.

Ingredients:

90g golden syrup (corn syrup)
120g caster sugar
120ml cold tea
120g currants
120g sultanas
120g butter
240g plain flour
1/2 tsp baking powder
1 tsp mixed spice (pumpkin pie spice)
1 tsp ground ginger
1 egg, beaten

Method:

Combine the syrup, cold tea, sugar, fruit and butter in a pan. Bring to a boil and cook for 5 minutes. Take off the heat and set aside to cool.

Sift together the flour, baking powder and spices into a bowl then fold in the boiled mixture before adding the egg. Mix the ingredients together to a soft dough then turn into a greased and lined 18cm diameter cake tin.

Transfer to an oven pre-heated to 180°C (Gas Mark 4) and bake for about 90 minutes (cover the top of the cake with kitchen foil if it is colouring too quickly). The cake is done when a skewer inserted into the centre emerges cleanly.

Allow to cool in the tin for 5 minutes then turn out onto a wire rack to cool completely. Store in an air-tight tin. This cake is best if allowed to mature for at least a few days before serving.
