This is another classic 'lucky' recipe for New Year's day.
Ingredients:
750g black-eyed peas
225g salt pork in 3cm dice
180g onions, chopped
150g chopped celery
150g chopped bell pepper
1 clove garlic
225g okra, cut up
2 cans chopped tomatoes
2 cans plum tomatoes
450g popcorn shrimp
3 tbsp margarine
Salt and pepper to taste
Method:
Soak the black-eyed peas over night then add the diced salt pork and bring to the boil. Cook for 40 minutes, or until the black-eyed peas are soft.
Fry the onions, bell pepper and garlic until the onions are soft then add the (drained) black-eyed peas, and pork along with the prawns. At the same time add all the tomatoes and simmer for about 40 minutes, until the tomatoes have softened and heated through.
