Biscoitos De Mel (Honey Biscuits) is a traditional Angolan recipe for a classic Portuguese-inspired biscuit (cookie) made with honey and flavoured with ground allspice. The full recipe is presented here and I hope you enjoy this classic Angolan version of: Honey Biscuits (Biscoitos De Mel).

It was the Portuguese who brought the culture of baking to Angola and these biscuits are a classic example of that influence. To make them properly you need a full-flavoured honey (acacia honey is good).
Combine the eggs and sugar in a bowl and beat until pale and creamy. Slightly warm the honey until runny then add to the egg and sugar blend and whisk to combine. Now add all the remaining ingredients and work together with your fingers until you have a dough.
Turn onto a floured work surface and knead lightly. Cover and set the dough aside to rest for 60 minutes then turn out onto a floured work surface. Roll the dough out thinly and use a cutter to divide into small biscuits (about 4cm in diameter). Re-roll the scraps and cut more biscuits.
Arrange on a baking tray lined with greaseproof (waxed) paper then transfer to an oven pre-heated to 190°C. Bake for about 15 minutes, or until they turn a pale golden brown.
Remove from the oven, transfer to a wire rack and allow to cool. If you want to decorate, then the traditional icing is a thin blend of icing sugar and rose water spread over the top.
