Biscocho de Nueces y Manzana (Apple and Walnut Loaf) a Classic Ecuadorian recipe for a cake of apple and walnuts in a yoghurt, egg and flour batter flavoured with lemon zest and cinnamon.
Whisk together the egg whites and half the sugar in a bowl. Add the egg yolks and beat to combine.
Beat the butter in a separate bowl until soft. Stir in the remaining sugar then cream with the butter. Combine the two mixtures then add the yoghurt, flour, baking soda, lemon zest and cinnamon. Mix thoroughly to combine then stir in the walnuts and apple pieces.
Stir well then turn into a greased and floured loaf tin. Transfer to an oven pre-heated to 180°C and bake for about 50 minutes, or until the top is golden brown and the cake is cooked through.
Allow to cool in the tin for 10 minutes, then carefully turn out onto a wire rack to cool completely.
Dust the top thickly with icing sugar, garnish with a few mint leaves, then slice and serve.
