Beignets de Mangue (Mango Fritters) is a traditional Senegalese recipe for a classic snack or dessert of mango, flour, milk, egg and sugar batter deep fried in oil before serving. Ingredients:
2 to 3 mangoes
100g plain flour
250ml milk
2 eggs, separated
2 dessert spoons sugar
pinch of salt
oil for deep frying
icing sugar for dusting
Method:
Mix together the flour, sugar and salt in a bow. Form a well in the centre, add the egg yolks and milk and gradually mix together to form a stiff batter.
Peel the mangoes and slice the flesh into strips from around the central stone. Cut the strips lengthways into strips then cut the strips across into small dice.
Heat the oil in a wok or deep fryer to 180°C. When the oil is hot, add the egg whites to a clean and dry bowl. Beat until stiff then gently fold into the batter with a metal spoon.
Stir in the diced mango flesh then drop the mixture by the tablespoon into the hot oil. Fry until golden brown all over, turning the fritters half way through.
