Beignets d'Aubergines (Aubergine Fritters)

Beignets d'Aubergines (Aubergine Fritters) is a traditional Mauritian recipe for a classic snack of fritters made from a blend of aubergine flesh with flour, eggs, onion, garlic and ginger flavoured with coriander leaves that are deep fried to cook. Ingredients:

500g aubergines (eggplants), washed, sliced and soaked in salted water
120g plain wheat flour
3 tbsp milk
1 egg, beaten
pinch of baking powder
1 onion, chopped
1 garlic clove, crushed
1 tbsp freshly-grated ginger
1/2 bunch of coriander, chopped
oil for frying
salt and freshly-ground black pepper, to taste

Method:

Sift together the flour, salt and baking powder into a bowl. Mix in the beaten egg then gradually work in the milk to form a batter.

Heat oil in a deep fryer or deep pan to 180°C. When the oil is hot, dip the aubergine slices, one by one, in the batter then drop into the hot oil and fry until golden brown on both sides.

Remove with a slotted spoon, drain on kitchen paper and serve warm.
