Original Recipe
ROAST LOIN OF VEAL.
886. INGREDIENTS.—Veal; melted butter.
Mode.—Paper the kidney fat; roll in and skewer the flap, which makes the joint a good shape; dredge it well with flour, and put it down to a bright fire. Should the loin be very large, skewer the kidney back for a time to roast thoroughly. Keep it well basted, and a short time before serving, remove the paper from the kidney, and allow it to acquire a nice brown colour, but it should not be burnt. Have ready some melted butter, put it into the dripping-pan after it is emptied of its contents, pour it over the veal, and serve. Garnish the dish with slices of lemon and forcemeat balls, and send to table with it, boiled bacon, ham, pickled pork, or pig's cheek.
Time.—A large loin, 3 hours.
Average cost, 9-1/2d. per lb.
Sufficient for 7 or 8 persons.
Seasonable from March to October.
Note.—A piece of toast should be placed under the kidney when the veal is dished.
Modern Redaction
Ingredients:
1 loin of veal (with the kidneys attached)
flour for dusting
300ml melted butter sauce
sliced lemon, to garnish
forcemeat balls, to garnish
Method:
Turn the loin over and remove the covering of fat from the kidneys. Dust all over with flour and cover the kidneys with brown paper.
Set the loin on a roasting dish and transfer to an oven pre-heated to 200°C. Roast for 30 minutes then reduce the oven temperature to 180°C and roast for 20 minutes per 500g. About 20 minutes before the roast is due to be ready, remove the paper covering the kidneys and allow to colour.
When done, remove the veal from the roasting dish and set aside to rest. Pour off any fat from the roasting tin then set the tin on the hob and stir in the melted butter sauce. Use to deglaze the pan and bring to a boil. Strain the sauce then place the veal on a serving dish, pour over the sauce and serve.
