Cherokee

Cherokee is a traditional British recipe, based on Mrs Beeton's recipe of 1861, for a classic store sauce of cayenne pepper, garlic, soy sauce, walnut ketchup and vinegar that's boiled and bottled before using as a flavouring ingredient. This is a traditional British recipe redacted from the redoubtable Mrs Beeton's 1861 volume Mrs Beeton's Book of Household Management, the classic Victorian cookbook.

Original Recipe



STORE SAUCE, or CHEROKEE.

528. INGREDIENTS.—1/2 oz. of cayenne pepper, 5 cloves of garlic, 2 tablespoonfuls of soy, 1 tablespoonful of walnut ketchup, 1 pint of vinegar.

Mode.—Boil all the ingredients gently for about 1/2 hour; strain the liquor, and bottle off for use.

Time.—1/2 hour.

Seasonable.—This sauce can be made at any time.

Modern Redaction


Ingredients:

15g cayenne pepper
5 garlic cloves
2 tbsp soy sauce
1 tsp walnut ketchup
600ml vinegar

Method:

Combine all the ingredients in a pan and bring to a boil. Continue boiling gently for 30 minutes then strain the liquid through a fine-meshed sieve. Pour into bottles, stopper securely and store for later use as a flavouring ingredient.
