Ingredients:
300g dried beans (black-eyed peas typically, but any white beans will do)
1/2 tsp of baking soda
1 onion, chopped
4 tomatoes, chopped
1 green bell pepper, diced
salt, to taste
Method:
Wash the beans, place in a large bowl, cover with plenty of water, add the baking soda and set aside to soak over night. The following day drain and wash the beans, place in a pot, cover with water and bring to a boil. Reduce to a simmer and cook for about 90 minutes or until the beans are tender.
Drain the beans, place in a clean pot and add the onion. Just cover with water and season to taste with salt. Bring to a boil then add the chopped tomato.
Reduce to a simmer, cover and cook for about 12 minutes or until the tomatoes have broken down to form a sauce.
Add the bell pepper, bring back to a simmer and cook for about 10 minutes more (uncovered), until the sauce is thick and all the ingredients are tender.
Serve hot with rice and accompanied by hot sauce, Zambian Piri Piri, of course!
