Barbecued Stuffed Tomatoes: Classic British recipe for a vegetarian barbecue dish of beefsteak tomatoes stuffed with a blend of rice, spring onions, herbs, pine nuts and raisins.
Ingredients:
4 beefsteak tomatoes
300g cooked rice
8 spring onions, chopped
3 tbsp fresh mint, chopped
2 tbsp fresh parsley, chopped
3 tbsp pine nuts
3 tbsp raisins
2 tsp olive oil
salt and freshly-ground black pepper, to taste
Method:
Cut the tomatoes in half and scoop out the seeds (discard these). Invert the tomatoes onto kitchen paper and se aside to drain for a few minutes.
Now turn the tomatoes the right way up and season the insides with salt and black pepper.
In a bowl, mix together the rice, spring onions, mint, parsley, pine nuts and raisins. Spoon this mixture into the tomato cups. Drizzle over a little olive oil, then place on a barbecue rack over medium-hot coals and cook for about 10 minutes, or until tender.
