Ingredients:

4 pork loin chops (without bones)
2 tbsp Dijon mustard
1 tsp mustard powder
1 tsp sea salt
1/2 tsp freshly-ground black pepper
3 tbsp butter

For the Herb Butter:
2 tbsp butter, softened
1 tbsp fresh parsley, finely chopped
2 tbsp fresh chives, chopped
1/2 tsp lemon juice
salt and freshly-ground black pepper, to taste

Method:

For the herb butter, simply mix all the ingredients together in a bowl then set aside.

Combine the mustards, salt, black pepper and butter in a bowl to form a paste. Rub this paste all over the chops. Place the coated chops on a hot barbecue and cook for about 5 minutes per side.

Arrange each chop on a piece of kitchen foil and brush with the herb butter. Close the foil to form a parcel about each chop then place back on the barbecue and cook for about 10 minutes more, or until cooked through and very tender.

Unwrap the chops, brush with more of the herbed butter and serve.
