Barbecued Plum and Nut Stuffed Pork Chops

Ingredients:

For the Stuffing:
75g soft breadcrumbs
90g plums (or tart apples), finely diced
2 tbsp pecan nuts (or hazelnuts), chopped
1/4 tsp freshly-grated nutmeg
1/4 tsp dried sage, crumbled
1/4 tsp sea salt

For the Pork:
4 pork chops, cut 3cm thick
4 tbsp melted butter
60ml orange juice
1/4 tsp freshly-grated nutmeg

Method:

Combine all the ingredients for the stuffing in a bowl and stir to combine.

Take the pork chops and carefully cut a deep pocket into each chop, starting on the skin side. Press about 80ml of stuffing into each pocket then secure with toothpicks to close.

In the meantime, mix together the melted butter, orange juice and nutmeg. Brush the chops with the orange juice glaze then place on a hot barbecue and cook over medium heat for about 40 minutes, turning every five minutes and brushing with the glaze as you do so. Continue cooking until the pork is no longer pink in the centre.

Remove the toothpicks and serve immediately.
