Barbecue-poached Salmon is a modern British recipe for a classic dish of salmon steaks that are white wine and butter with herbs and lemon slices in a foil packet that is placed directly on a barbecue. Ingredients:
4 salmon steaks (about 250g each)
2 tbsp butter
1 tsp sea salt
8 thin slices of lemon
120ml white wine
a few cracked black peppercorns
4 sprigs of parsley
4 sprigs of dill
Method:
Arrange each salmon steak on a square of kitchen foil (use double thickness). Season with salt and black pepper then top with two slices of lemon, 1/2 tbsp butter and a sprig of parsley and dill each.
Drizzle over the wine then close the package securely, crimping the edges so that no steam can escape. Place on a hot barbecue and cook for about 25 minutes, or until the fish is cooked through and flakes easily with a fork.
