Banane au Caramel (Caramel Bananas)

This is a classic but simple Senegalese dessert.

Ingredients:

4 bananas
300g golden caster sugar
6 tbsp butter
100ml evaporated milk
6 tbsp crushed peanuts

Method:

In a pan, mix together the sugar, 3 tbsp butter and evaporated milk. Heat, stirring frequently, until the sugar has dissolved then continue heating without stirring until the sugar has caramelized.

Melt the remaining butter in a frying pan. Peel and halve the bananas lengthways then add to the pan with the butter and fry until nicely browned on all sides.

Arrange the fried bananas on a serving dish. Drizzle over the caramel then sprinkle over the crushed peanuts.

Serve immediately.
