Ingredients:

200g (1 cup) granulated white sugar
140g (1 cup) plain flour
45g (1/3 cup) unsweetened cocoa powder
3/4 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
1 large egg
1 medium-sized banana (about 1/2 cup), mashed until smooth
120ml (1/2 cup) warm water
60ml (1/4 cup) milk
60ml (1/4 cup) vegetable oil (rapeseed, corn oil or grapeseed oil are all good)
3/4 tsp vanilla extract

For the Chocolate Fudge Frosting:
90g (3 oz) unsweetened chocolate, coarsely chopped
100g (1/2 cup) unsalted butter, at room temperature
120g (1 cup) icing sugar, sifted
1 tsp vanilla extract

Method:

Mix together the sugar, flour, cocoa powder, baking powder, baking soda and salt in a large bowl.

In another bowl, beat together the egg, mashed bananas, water, milk, oil and vanilla extract. Add the liquid ingredients to the dry ingredients, mixing until well combined (you will end up with quite a thin batter).

Ladle the batter into the wells of a 12-hole muffin tin lined with silicone or paper cases then transfer to an oven pre-heated to 180C (350F, Gas Mark 4) and bake for about 20 minutes, or until the cupcakes are well risen and a skewer inserted into the centre emerges cleanly.

Remove from the oven and set aside on a wire rack to cool completely.

For the chocolate frosting, melt the chocolate in a heat-proof bowl either in the microwave or over a pan of barely-simmering water. Once melted, mix until smooth then set aside to cool to room temperature.

Once the chocolate has cooled, cream together the butter and icing sugar in a bowl until pale and fluffy. Beat in the vanilla sugar then work in the melted chocolate. Beat thoroughly until the resultant frosting is smooth and glossy then spoon into a piping bag fitted with a large star-shaped nozzle and pipe in swirls onto the top of your cupcake.
