Ingredients:
400g smoked sprats (not the tinned kind)
mustard for dipping (I use a blend of English and Dijon)
lemon wedges, to accompany
Method:
Arrange the sprats on a lightly-greased baking tray. Transfer to an oven pre-heated to 200°C and bake for about 10 minutes, or until smoking hot all the way through.
Turn the sprats into a bowl and serve accompanied with mustard and lemon wedges
