Baked Papaya with Sweet Coconut Cream

Method:

Pre-heat your oven to 180°C.

Cut open the ripe papaya in half and scoop out the sparkling black seeds.

Add a little water into each papaya half and sprinkle over some sugar (about 1-2 tbsp per half).

If desired, tuck a knotted pandan leaf into the water (or use an Indian bay leaf). Arrange on a baking tray then set in the centre of your pre-heated oven and cook for about 45 minutes or until the papaya is tender but still holds its shape.

Remove from oven, carefully transfer into a serving bowl and immediately ladle some coconut milk into each half.

Allow to rest for 5 minutes, then serve immediately.
