Baked Bananas a Classic British recipe for a barbecue barbecue dessert of bananas baked in a foil parcel with passion fruit pulp, orange juice and orange liqueur that's served with an orange cream.
Ingredients:
4 bananas
2 passion fruit
4 tbsp orange juice
4 tbsp orange liqueur
For the Orange Cream:
150ml double cream
3 tbsp icing sugar
2 tbsp orange liqueur
Method:
Peel the bananas, then place each on on its own sheet of kitchen foil.
Halve the passion fruit and squeeze the juice and pulp of one half over each banana. Spoon over the orange juice and orange liqueur.
Fold the kitchen foil over the top of the bananas, ensuring that they are completely enclosed. Place on a the rack of a barbecue over hot coals and cook for about 10 minutes, or until just tender.
For the orange cream, combine the double cream and icing sugar in a mixing bowl. Beat this mixture until it stands in soft peaks then carefully fold in the orange liqueur. Set aside to chill in the refrigerator until required.
When the bananas are cooked, transfer the parcels to individual serving plates. Open the foil parcels, add a spoonful of the orange cream and serve.
