Avocado Leaf Yoghurt Salad Dressing is a modern Fusion recipe for a classic yoghurt-based salad dressing flavoured with Dijon mustar, honey, lemon juice and olive oil that's flavoured with avocado leaf powder. Ingredients:
2 tbsp plain yoghurt or vegan yoghurt
1 tsp avocado leaf powder
1 tbsp Dijon mustard
1 tbsp honey or maple syrup
2 tbsp lemon juice
3 tbsp olive oil
Salt and freshly-ground black pepper
Method:
In a bowl, whisk together the yoghurt, mustard, honey, and lemon juice until smooth. Now stir in the avocado leaf powder.
Slowly drizzle in the olive oil while whisking to create a creamy emulsion.
Finish by seasoning to taste with salt and freshly-ground black pepper.
This dressing works well with mixed greens, sliced avocados, cherry tomatoes, and toasted seeds or potato or grain salads where it yields an unique herbal note.
