Ingredients:

150g onions, chopped
75g carrots, sliced
75g celery, sliced
350g aubergine (eggplant), peeled and cubed
150g green bell pepper, diced
3 garlic cloves, minced
1.5l chicken stock
210g lentils
220g tomatoes, chopped
120g dried apricots, sliced
1/4 tsp ground cinnamon
1/4 tsp ground allspice
1/4 tsp cayenne pepper
1 tsp paprika
1½ tsp salt
3 tbsp fresh parsley, chopped
1 tbsp fresh mint, chopped
olive oil, for frying

Method:

Add a generous slug of olive oil to a pan and when hot fry the vegetables until lightly browned (about 8 minutes). Now add all the remaining ingredients (except the parsley and mint). Bring the mixture to a simmer and cook gently for about 35 minutes, or until the lentils are tender.

When ready, stir in the fresh herbs, adjust the seasonings to taste then ladle into warmed soup bowls and serve.
