Armjanskij sup chechevicy (Armenian Lentil Soup) is a traditional Armenian recipe for a classic soup of lentila and vegetables with apricots in a spiced chicken and tomato stock. Add a generous slug of olive oil to a pan and when hot fry the vegetables until lightly browned (about 8 minutes). Now add all the remaining ingredients (except the parsley and mint). Bring the mixture to a simmer and cook gently for about 35 minutes, or until the lentils are tender.
When ready, stir in the fresh herbs, adjust the seasonings to taste then ladle into warmed soup bowls and serve.
