This is a classic Irish teabread that was traditionally served at Halloween. The practice hearkens back to the Celtic past, where apples were considered a magical fruit and in Ireland apples, in various forms, are still served for Halloween.
Mix together the grated apple and lemon zest in a bowl.
Sift the flour into a bowl and mix in the sugar. Add the diced butter and rub into the flour until the mixture resembles fine crumbs. Stir in the grated apple mix, add the beaten egg and mix well. Now add just enough milk to form a smooth dough.
Turn the resultant dough into a buttered 20cm diameter springform cake tin and smooth over the top. Transfer to an oven pre-heated to 180°C and bake for about 35 minutes or until the top of the cake is golden brown and a skewer inserted into the centre emerges cleanly.
Allow to cool in the tin then turn out onto a wire rack to cool. Serve warm, spread with butter.
