Apple Pear Flapjacks is a modern Canadian recipe for a classic breakfast pancake of flapjacks made from a cream, flour and milk batter leavened with baking soda and containing apple and pear in the batter. Ingredients:
2 tbsp salted butter, melted and cooled
2 eggs
175ml sour cream
125ml milk
125ml apple juice
2 tbsp granulated sugar
210g plain flour
1 1/2 tsp baking soda
1/2 tsp salt
1/4 tsp ground cinnamon
1 small apple, peeled and grated
1 small pear, peeled and grated
Method:
Combine the butter, eggs, sour cream, milk and apple juice in a bowl and whisk to mix thoroughly. In a separate bowl, mix together the sugar, plain flour, baking soda, salt and cinnamon. Add the flour mix to the liquid mix a little at a time, whisking thoroughly to combine after each addition. Now work in the grated apple and the grated pear.
Heat a griddle or a non-stick frying pan over medium-low heat. Drop 60ml (1/4 cup or 4 tbsp) of the batter onto the hot pan for each pancake. Cook for about 3 minutes, or until the edges begin to bubble and the batter on top has started to dry. Flip the pancakes over and cook for about 2 minutes more, or until the bases are golden brown and set. Transfer to a plate then cook the next batch.
Serve immediately, accompanied by maple syrup. As a variant you can add blueberries or other berries to the batter.
