Ingredients:
1.2l milk
1 medium cooking apple, peeled, cored and grated
4 tbsp smooth peanut butter
juice of 1 lemon
3 tbsp porridge oats
1/4 tsp ground ginger
salt and freshly-ground black pepper, to taste
chopped parsley, to garnish
Method:
Heat the milk to the scalding point (where small bubbles appear around the edges of the pan) then blend together the peanut butter and lemon juice until smooth before whisking into the pan. Now add all the remaining ingredients.
Return the mixture to a simmer and cook for 15 minutes. Take off the heat an allow to cool slightly. Transfer to a blender (you may need to do this in batches) and process until smooth. Return the soup to the pan and allow to re-heat. Adjust the seasonings to taste then ladle into warmed soup bowls, garnish with chopped parsley and serve.
