Apfel-Rosinen Risotto (Apple and Raisin Risotto) is a traditional Namibian recipe for a classic accompaniment of a basmati rice risotto made with a cider base that contains apple and raisins and which is typically served with grilled or barbecued meat. This is a traditional Namibian accompaniment to fried steaks, and grilled or barbecued meat.
Ingredients:
50g butter
1 small onion, diced
200g basmati rice, washed and set aside to dry
1/2 tsp salt
1/2 tsp ground turmeric
2 garlic cloves, minced
1 tsp mixed dried herbs
100g raisins
25g brown sugar
1/2 tbsp ground cinnamon
625ml apple juice or cider
6 apples (Granny Smith typically), peeled, cored and chopped
Method:
Melt the butter in a pan, add the onion and fry for about 3 minutes or until soft and translucent. Add the rice and stir to coat in the butter then pour in the apple juice or cider and add the spices.
Bring to a simmer and cook gently over low heat stirring frequently for about 20 minutes. If the mixture looks a little dry add a little more liquid as needed. Now stir in the apples and raisins and cook for about 5 to 10 minutes more, or until the rice and the fruit are tender.
Serve hot to accompany fried, grilled or barbecued meat.
