Ingredients:

1 large, ripe, pineapple
250ml port wine
sugar, to taste
50g cashew nuts, lightly toasted and chopped

Method:

Peel the pineapple then cut into slices 1cm thick. Sprinkle each slice of pineapple to sweeten slightly on both sides.

Place the pineapple slices in a bowl and add the port wine. Cover and set aside to infuse over night, turning the pineapple slices occasionally to ensure that they marinade evenly.

Arrange the slices in dessert dishes, garnish with the chopped cashew nuts and serve.
