Anamikto Siropi (Mixed Fruit Squash)

Anamikto Siropi (Mixed Fruit Squash) is a traditional Cypriot recipe for a classic drink made from a fruit syrup made with orange juice, bitter orange juice and tangerine juice flavoured with basil leaves, cloves and lemon juice. Ingredients


500ml orange juice
500ml bitter orange juice
250ml tangerine juice
600g sugar
500ml cold water
3 basil leaves
2 cloves
120ml lemon juice

Method:

Squeeze the juice from the fruit and combine in a glass bowl.

Combine the sugar, water, basil leaves and cloves in a saucepan. Heat, stirring constantly, until the sugar has dissolved. Add the juice and bring to a boil then take off the heat.

Remove the cloves and basil leaves and set aside until half cooled then pour into thoroughly washed and sterilized bottles. Store in the refrigerator until needed.

To serve, pour 4 tbsp of the squash mixture into a highball glass. Add 4 ice cubes, a slice of fresh orange then top with chilled water, stir well to combine and serve (you can use still or sparkling water, as you prefer).
