Fa’ausi (Coconut Bread in Coconut Milk Caramel) is a traditional American Samoan recipe for a classic dessert of cubed coconut bread served soaked in a coconut milk and sugar caramel. Originally made with taro or breadfruit baked until crisp then covered with a coconut milk caramel the modern version of the dish uses Fa'apapa (coconut bread) instead.
Once prepared and cooled sliced the coconut bread into 4cm thick slices. Cut these into cubes.
In the meantime, to prepare the coconut caramel: add sugar and 60ml of water to a small saucepan. Place over medium heat and continue to mix until the sugar dissolves completely.
Bring the mixture to a boil and cook until it turns a deep golden brown. Make sure to avoid stirring during this time. It should take you about 6 minutes.
Once done, take the pan off the heat and slowly pour in the coconut milk, stirring all the time. Place the pan back over medium heat and stir until the mixture is smooth and the ingredients are properly combined. Take off the heat and set aside to cool.
Take a shallow serving bowl and place the coconut bread cubes inside. Pour over the caramel then set aside for an hour for the caramel to be absorbed by the bread.
