American Dumplings is a traditional American recipe for a classic accompaniment of dumplings made from a blend of flour, baking powder, salt, shortening and milk that are cooked in barely-boiling stock and that are typically served with the Thanksgiving meal. The full recipe is presented here and I hope you enjoy this classic American version of: American Dumplings.
Combine the flour, baking powder and salt in a bowl. Dice the shortening and rub or cut into the flour mix until the mixture resembles coarse crumbs. Stir in the milk and egg (if using) until just blended.
To use this dumpling mixture bring your cooking liquid to a boil (you can add to a stew at the end of the cooking time), or bring a pan of beef, chicken stock or vegetable stock to a gentle boil. Drop the dough by the mounded tablespoon (arrange into egg shapes) into the liquid and cook for between 6 and 7 minutes, or until done through (during this time watch the heat to ensure the liquid is only boiling gently).
Turn the dumplings over and cook for a further 5 minutes, or until done through. Remove with a slotted spoon and serve.
