This is a Nigerian-influenced recipe for an universal all-purpose seasoning. I've separated the ingredients list into common ingredients that can be sourced anywhere and more African-specific ingredients. The recipe works with just the common ingredients but the other ingredients will give more of a Nigerian/West African flavour. If you want to make this vegetarian just omit the dried and ground prawns. This all purpose seasoning is the perfect seasoning blend for stews, stir fry dishes, meats, vegetables, and more. It's a versatile spice every cook should have on hand to elevate their dishes.

Ingredients:

2 tbsp smoked paprika
¼ tsp cayenne pepper
2 tbsp garlic powder
2 tbsp onion powder
1 tbsp ground black pepper
1 tbsp dried oregano, crumbled
1 tbsp dried parsley
1 tsp dried thyme
¼ tsp ground cumin
1 1/2 tbsp salt

African-specific Ingredients (optional):
1 tsp ground dried prawns
2 tsp irú (fermented and dried locust beans)
1 tsp ground guinea pepper

Method:

Mix all the ingredients together in a bowl then spoon into an air-tight jar.

Store in a cool, dark place. This spice blend should remain good for up to 6 weeks.
