Afelia (Pork Marinated in Wine) is a traditional Cypriot recipe for a classic dish of pork spare ribs marinated in red wine that's fried in oil. The full recipe is presented here and I hope you enjoy this classic Cypriot version of: Pork Marinated in Wine (Afelia).

Ingredients:
1.5kg pork spare ribs
2 tbsp coriander seeds, crushed
250ml dry red wine
120ml corn oil
salt and freshly-ground black pepper, to taste
Method:
Cut the pork ribs into small pieces. Place these in a glass bowl and add the coriander seeds and red wine. Cover and set aside in the refrigerator for 6 hours to marinate.
After this time, drain the meat. Place the oil in a medium pan then add the meat and fry until browned. Pour over the wine and coriander mix. Bring to a boil then pour over just enough hot water to cover the meat.
Season to taste with salt and black pepper and cook over low heat, covered, for 60 minutes, or until the pork is tender.
Serve the afelia hot, accompanied by rice pilaff and with the sauce poured over the meat and the rice. Afelia is also good served with boiled potatoes and boiled vegetables.
