Crème pâtissière (literally 'pastry cream' in French) is a thick sweet sauce that's made from a combination of milk or cream, egg yolks, fine sugar, flour and occasionally flavoring such as vanilla, chocolate, or lemon. Crème pâtissière is a key ingredient in profiteroles. Essentially it is a form of custard thickened with flour.
