These recipes, all contain Tripe as a major wild food ingredient.

Tripe refers to the stomach of a cow, pig, sheep or ox (with ox arguably having the best flavour). This usually comes pre-cleaned and sliced ready for cooking. It is often soaked in milk prior to cooking to tenderise and in Britain is typically cooked with onions.
