A tapenade is a rich paste classically made out of black olives, capers, anchovies, mustard, basil and parsley. It is black in colour and very rich in flavour. These days tapenades may also be made out of a mixture of red bell peppers and chilli peppers. It can be used as a marinade for meat, stirred into pasta sauces or simply spread on breads such as crostini or bruschetta as canapés or starters.
