Slaking is the process of making an initial paste by mixing flour, arrowroot, cornflour or custard powder into a thick paste with a little water or milk. This acts to eliminate any lumps from the resulting sauce. Most slakes are 'non-Newtonian fluids' and the harder you attempt to stir the more difficult it is. Stir gently to mix the powder into the liquid to form the paste. Then, as you add more liquid to make your sauce stirring will become easier.
