These recipes, all contain Sauce Poivrade as a major wild food ingredient.

Poivrade Sauce is a rich brown sauce classically intended as an accompaniment for game. The basis of this sauce is a Demi-glace Sauce along with carrots, onions, vinegar, crushed peppercorns, thyme, bay leaf, parsley, salt, pepper and olive oil. The game is usually left in the marinade for 24 hours and is cooked along with it. The cooking juices are then reduced to make the sauce which is filtered through a Chinoise.
