Rossini denotes a garnish of collops of foie gras and truffles tossed in butter and served with a rich meat glaze.

Tournedos (Fillet) Rossini were created by the chef of the Paris restaurant Maison dorée, Casimir Moisson, and named after the composer Gioachino Rossini.
