As well as displaying recipes by name, country and region of origin I am now planning a whole series of pages where recipes can be located by meal type and main ingredient. This page gives a listing of all the Potherb recipes added to this site.

These recipes, all contain Potherb as a major wild food ingredient.

A potherb is a plant whose leaves are boiled and served as greens like spinach. In general, only small, lender young leaves should be collected; as they mature, they rapidly become tough and bitter. Potherbs generally fall into two groups: the first are tender plants and only need to be blanched in water for between 30 seconds and 1 minute. The second class are more robust and bitter. These need to be boiled rapidly for several minutes before serving.
